When you gas barbecue in direct heat, the flames sear the meat surfaces to keep in the juices. The blowtorch is using convection to cook. By adjusting the sweep and distance of the flame, you can get an arguably different crust to what you get in a pan (conductive cooking), but no less tasty or flavourful. Perkins dry and wet rubs all the fine spices and herbs with a brush to lavish us with a feast for the eyes that brings out all the intense flavors of this scene .

There's so much going on here and the mix of ink and wash allows the viewer to easily distinguish between the foreground and background. It really does feel like the forest is on fire!
