It's amazing to watch the evolution of his sketches during a convention. He puts a tremendous amount of thought, skill, and humor into them. But you don't have to go to a con to see Adam at work. Youtube has many videos of Adam creating/sketching at cons, e.g., the multi-part video "Adam Hughes - Anatomy of a sketch."
