It's a mystery why they stop coloring, but the truth is probably deadlines and it wasn't going to show up in published form anyways. It does make a lot of these look very complete.

I think coloring the first 3-4 pages in manga is more of a stylistic choice to catch your attention. Those pages are published in color in the big magazines but usually not in the collected trades (occasionally they are). I think they have been doing it that way for decades. When reading the manga collections, you can normally tell which pages were originally in color because they don't reproduce as well into black & white.
